A chipotle ( chi-POHT-lay ) or chilpotle, is a smoke-dried, ripe jalapeño pepper used for seasoning. It is a chile used primarily in Tex-Mex and Southwestern dishes. It comes in different forms, such as chipotles en adobo (stewed in adobo sauce).
The name comes from the Nahuatl word chīlpoctli---meaning "smoked chile". A chipotle's heat is similar to that of the jalapeño, a Guajillo pepper, Hungarian wax pepper, or Anaheim…comparable to Tabasco sauce.
